Apart from exceptional guiding from rangers, a world-class luxury spa and wellness centre and impeccable guest service, a critical aspect that formed part of the motivation behind Kapama Karula’s award was its exquisite fine dining.  Kapama Karula’s kitchen, headed up by Executive Chef, Makhi Maki, has over the past few years, served guests some of the finest meals you would find on a luxury safari experience. For a bit of cooking inspiration, below you will find a delicious recipe for one of Chef Makhi’s signature dishes. A firm favourite for many of our guests.

Cheddar cheese & Chardonnay soup 

Soup

200ml flour 

250g butter

2 lt chicken stock or veg stock

500ml cream

500ml chardonnay

500g cheddar cheese

Method

Melt butter on stove on a low heat, then flour & stir with a whisk for 2 to 3 minutes. 

Add the wine while stirring, then stock and cream. Finish with the cheese. Season with salt & pepper

Cheddar bread

500g flour

10 g yeast

15 g salt

20 g sugar

90 g cheddar cheese grated

300ml warm water 

50 g olive oil

Method

Weigh your dry ingredients first and add grated cheese. Mix in your liquids and knead the bread dough for 5 minutes and allow to prove. Bake in the oven @ 180 degrees for 18 minutes. Allow the bread to cool down and slice to slices and toast them.
